Why do so few cards accept Monero?

XMR privacy breaks the compliance chain most card programs need: BIN sponsors and acquiring banks require auditable flows. The few direct-XMR cards run on specialized conversion rails - which is also why XMR loads often cost a premium over BTC/USDT loads.

Does a card undo Monero's privacy?

Partially: the on-chain XMR side stays private, but everything the card spends is normal card transaction data - merchant, amount, time, and whatever identity you gave the provider. A no-KYC XMR card keeps identity out; it cannot anonymize card rails.
